Zucchini and feta cheese pita 500gms Zucchini grated
700gms feta cheese
4 large eggs
Salt and pepper
Lightly salt the grated zucchini for ten minutes. Drain and squeeze to remove as much liquid as possible.
Crumble the feta cheese and mix with the grated zucchini and lightly beaten eggs. Add black pepper to taste.
Prepare sheets of filo pastry and have ready some melted butter to brush each sheet.
Make a long sausage using 2 sheets of filo brush each sheet with the melted butter using the full size of the filo sheets. Along the longest edge of the filo sheets add a row of the zucchini mixture approx 1 inch or 3cm in diameter making sure there are no gaps in the zucchini mixture.
Carefully lift the edge of the filo and roll up making a long sausage shape. Continue until all the zucchini mixture is used.
On a flat baking tray form into a spiral shape.
You may want to make 2 smaller spirals or one large one.
Brush the top with melted butter. Bake at 190 degrees C for approx 40 minutes or until golden brown.
This recipe may be frozen and stored before cooking for any easy no fuss light lunch dish . Serve cut into wedges with a crisp green salad.
